Halloween is here and the kids are in a tizzy trying to figure out their Halloween costumes. We’ve decided to have a Halloween party this year complete with all the ghoulishness that goes with it. So besides the decor and the costumes, the table also needs to reflect the theme of the day. From Vampire Blood with little bats and ghosts as a drink to Jack O Lanterns made of rice – we have it all.

Today I’m going to share a very easy and tasty recipe with you that the kids can help you make. This toddler-friendly recipe will have them shrieking with glee and their friends are going to love devouring them all.

So I’ve used carrot juice that I made at home for this recipe. But if you don’t have fresh carrots, you can use store-bought carrot juice.

Ingredients – Makes 6

  • 2 Carrots – cut
  • 1 Tomato – de-seeded and cut
  • 1/2 Cup Rice
  • 6 Tbsp Grated Cheese
  • 6 rectangle-shaped Green Capsicum pieces
  • 1 Tsp Oregano
  • A handful of Black Olives/ Green Capsicum slices
  • 1 Tsp Nigella Seeds (Kalonji)
  • Salt & Pepper to taste
  • 1/2 Cup Water (approximately)

Method

  • To make the juice, toss the carrots, tomatoes and 1/2 cup water into a blender and blitz. Make sure the carrots and tomatoes are well blended.
  • Strain the liquid into a cup so that there are no chunks.
  • Now boil the rice and carrot and tomato juice with some salt for about 15 minutes or till all the liquid is absorbed.
  • Let the rice cool down slightly. Add the grated cheese and oregano and mix well. Adjust the seasoning as per you
  • Wet your palm with some water so that the rice doesn’t stick.
  • Taking approximately 2 tsp of the rice mix and form into balls.
  • Use the rectangle capsicum pieces to form the stem of the Jack O Lantern
  • You can use black olives or nigella seeds to make eyes.
  • Play around with black olives bits and green capsicum bits to make ghoulish and creepy grins on the rice balls.

There you have a tasty and easy Halloween spooky snack ready.
