It is back to school week and if there is one thing all parents are looking for it is fuss-free healthy breakfast recipes that their kids cannot say NO to!

So Kidsstoppress met with Chef Rakhee Vaswani, of Palate Culinary Studio to find breakfast recipes every child will love and every parent would be happy their kids are eating. 

Chef Rakhee Vaswani is a celebrity chef, food consultant and is touted as the ‘Desi Nigella’. Today we are making everyone’s favourite breakfast recipe with a very healthy twist. Pancakes made with one complete serving of fruit — this recipe has a whole serving of bananas in it!  

Here is all you need. Make sure to watch the video for all the healthy substitutions you can make to this recipe. 

Ingredients:

·         Flour – 200 gms

·         Baking powder – 1 tbsp

·         Baking soda 1/2tsp

·         Salt –a pinch

·         Sugar 3 tbsp

·         Egg – 1

·         Milk – 1 cup (250 ml) skimmed milk /buttermilk

·         Butter (melted) – 1 -2 tbsp

·         Bananas 2-mashed

·         Honey – as required

Method:

1.      Mix the flour, sugar, baking powder, baking soda, salt in a bowl and keep aside.

2.       In another bowl mix the milk, butter, egg and mashed bananas

3.       Add the flour and mix, taking care not to over mix it.

4.       Heat a flat griddle or pan over medium-high heat.put a ring mould of 5 inch

5.       Spoon drops of 1-2 tbsp of the batter in the ring mould. and when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.

6.       Serve hot with honey, strawberry slice and some whipped cream.
