When it comes to weeknight dinner I don’t want to be messing around. I usually stick to tried and tested recipes – everyone (at least in my house) is ‘hangry’ and very impatient. Tantrums and tempers are likely to be simmering and it only needs the slight instigation to erupt. Okay, I make my house sound like a war zone, but seriously there is no messing with dinner time. We are all tired and need to have quick easy options on hand.  I try and have some of my prep done on weekends, to make weeknights enjoyable for all of us.

On most weeknights I stick to familiar recipes, every now and then we take a break from the routine. One evening, my daughter wanted to eat pizza and I wanted to come up with a way to get her involved in dinner prep. I also did not want to deal with a huge mess or clean up so flatbreads were my best bet. I had seen a lot of fun videos of flatbreads on social media and it looked quite simple to make.

This recipe is flexible, so use it as a guide and feel free to substitute any ingredient based on what you have on hand. For instance, I have used a flatbread, but a naan or pita will work just fine. Also, I really encourage you to get your kids involved in assembling these.
