I love to experiment with the kids in the kitchen. Cooking with them is a good stress buster and it’s not just a way for them to learn new things and experiment, but it’s a wonderful bonding experience as well. 

The recipe we’re sharing with you today is extremely simple to put together and it’s one that my kids made all on their own. It’s simple, healthy and very tasty – what more can one ask for. Made with oatmeal flour, these muffins are high in dietary fibre. You can add or subtract whatever Mediterranean toppings your kids like/ don’t like. That’s the best part of this dish – you’ll still get a delicious muffin.

Red Bell Pepper & Oatmeal Muffins

Ingredients

  • Muffin Base
  • 2 Cups Ground Oats
  • ¼ Cup Coconut/ Regular Sugar
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • Sea Salt to taste
  • ½ Cup Yoghurt
  • ½ Cup Milk
  • ½ Cup Coconut Oil/Olive Oil

Mediterranean Muffins

  • ½ Cup Red Peppers- roasted and chopped
  • ¼ Cup Olives sliced
  • ½ Cup Feta Cheese crumbled
  • ½ Cup Basil chopped
  • 1 Tbsp Greek Seasoning/Italian Seasoning

Method

  • Preheat the oven to 200’C
  • Grind old-fashioned oats to form oatmeal flour.
  • Line a 12-cup muffin tin with parchment liners.
  • In a large bowl, whisk together the ground oats, coconut sugar, baking powder, baking soda and salt.
  • In a separate bowl, whisk together the coconut oil/olive oil and milk.
  • Mix the dry ingredients into the wet and fold in your toppings and adjust the seasoning.
  • Spoon the batter into the muffin tin and bake until a toothpick inserted comes out clean for about 20 to 25 minutes.
  • Let the muffins cool slightly before removing it.

Serve with a dip and enjoy.

Note: Since every oven is different, please keep an eye on the muffins towards the end of your bake time.
