By the end of December, food trends are being predicted and surveys reveal their findings. Food arouses such a passion in us all. Don’t you agree? We all love some things, but 2023 might be the year you try some new foods and rediscover some old faves – and enjoy them all.

Healthy, Healthy & Healthy

The one thing we have learnt over the past 2 years is that staying healthy matters the most. There has been a surge in eating healthy and cooking the same way too. We have all become a lot more conscious of what we eat, where it’s from, and what are the ingredients. From Instagram chefs providing easy and nutritious recipes to restaurants focussing on healthy meals with locally sourced ingredients. Writing their nutritional value, calorie content and dietary restrictions on the menu are also making it more comfortable and informative for the consumer.

Ancient Grains

One trend that is expected to gain popularity in India and around the world is the use of ancient grains and ancient ingredients. These include millets, ragi, bajra, amaranth (Ramdana), and quinoa, which are rich in nutrients and have been used in traditional diets for centuries. Not only are these grains healthy, but they are also gluten-free, so people with celiac disease or gluten intolerance can eat them. By the way, the U.N. General Assembly adopted a resolution, sponsored by India and supported by more than 70 countries, declaring 2023 as the International Year of Millets.

From India To Korea

Chefs across the world are looking for new and indigenous ingredients and ways to make the produce shine — this really inspires their menus, be it in a form of a dish or dedicating the whole menu to it. Chef-driven menus are what customers are looking for now; they don’t mind a mix of cuisines or flavour profiles, they want to see the chef’s specialities and innovation.

Hero One Dish

Single menus are finally here chefs are smashing it – be it ramen or tacos. One simple dish but have different flavour profiles using different sauces, authentic forms of cooking and tastes. It’s less confusing for the consumer when they want to order something particular or have a craving for the same.

Fermented Foods 

Fermented foods like dahi, idli, achaar and buttermilk have been part of the Indian diet for centuries and over the last few years, their popularity has only grown. There are many other fermented foods that have become extremely popular and the best thing is that they are tasty & good for your health. So options like kefir, kimchi, kombucha, miso, beet kvass are super good since they contain beneficial bacteria that can help to improve gut health. Furthermore, fermented foods are rich in vitamins, minerals, and other beneficial compounds, such as antioxidants, which can help to improve overall health.

Dates 

Not new to us, dates or khajoor are not new to the world either – there are records of them in the days of ancient Mesopotamia. Rich in antioxidants, it’s great for the bones, sleep disorders, gut health and anaemia.

How can you eat it?

– First thing in the morning
– Post lunch if Hb levels are low
– Kids mid-meal, especially if they are around puberty

Plant-Based And Gluten-Free Pasta

Pasta!! This is the one name that echoes in my brain when I think of, what dish kids absolutely love. I guess it’s the same for you. And like every parent, to make our kids happy, we get that same old pasta from the shops or spaghetti made of maida and whip up a meal.

Wait for it – there are many healthier options available now and plant-based pasta will be big in 2023. It’s not really such a new idea, but one that is steadily gaining favour even with pasta makers. Everything from zucchini and carrots to cauliflower and green bananas is standing in for flour, and many kinds of pasta are made gluten-free with rice and chickpeas. This trend is a winner all around because pasta makes a wonderful vehicle to eat even more vegetables – always a good thing, right?

Speciality Salts

Reducing our salt intake is essential and everyone seems to have become very mindful of it. But now there is so much more than just the plain version or even Himalayan pink salt. On the menu and growing popular are different versions such as smoked salt, black truffle salt, Celtic salt, matcha salt, and even black lava salt from Hawaii and Cyprus. 

Hojicha Tea

Herbal and caffeinated, this Japanese green tea is all set to be a hot new trend in 2023. Lightly roasted and sweet, it tastes yummy in an iced latte.

Focus On Family Dinners

Family meals together were at an all-time high during the peak of the pandemic. Then it fizzled out. The 2023 anticipated trend is more meals being prepared at home mostly though due to rising food costs and inflation. Also, the return to family meals also aligns with another food-related trend: rejecting diet culture to help kids develop healthy relationships with food. Family meals with supportive feeding habits can positively shape children’s beliefs, attitudes, and eating habits for a lifetime. We couldn’t agree more!
